About this Coffee.
Yellow Catuai is a favorite due to its sweeter flavor and strong productivity—it produces a lot of top-quality cherries. During harvest, 25 pickers make three passes to hand-select the ripest cherries. After a 12-hour fermentation at La Bandera station, the coffee dries on raised beds for about 35-40 days.

El Encino.
The farm spans over 100,000 square meters and is home to a variety of micro-lots and coffee varieties. Nestled in the mountainous region of El Encino, it benefits from the winds coming off Cerro de la Muerte, creating an ideal microclimate for cultivating high-quality coffee.

Sustainability.
Additionally, the farm has protected areas with water sources that supply farmers with water during the summer. Preserving these areas from logging and pollution is crucial to maintain the farm's sustainability and water supply for the entire community.
