This year we’re celebrating our 10th anniversary in Donosti! As the city’s first specialty coffee spot, we’re excited to share our knowledge and experience with future baristas. We want to make sure coffee is brewed the right way—at home, in cafés, and across restaurants in town.

Meet Alexis, your trainer: Alexis is our in-house barista here at Old Town Coffee Roasters. He’s a theory-meets-practice kind of guy—super patient, detail-oriented, and a great teacher. You’ll be in good hands.

What will you learn in this barista course?

— Coffee history: From its roots to the third wave.

— Specialty coffee: What makes it so unique and why it matters.

— Varieties and processes: Learn the differences between Arabica and Robusta, and how different processes (washed, honey, natural) affect flavor.

— Espresso & extraction: Everything about grind size, ratios, extraction times, and machine practice to pull the perfect shot.

— Latte art: Master milk steaming and create hearts, tulips, and rosettas that will make you smile.

How to get to our coffee roastery  🚌💨

From Donostia – San Sebastián, just hop on bus 33 or 40 to the Igara stop. Then walk 400 meters… At the end of the street, in the industrial area, you’ll spot our roastery (just a heads-up — it’s not at our café!).
